Ingredients:

  • 2 pounds boneless chicken thighs

  • 2 Tbsp. olive oil

  • 2 Tbsp. Bottle Rocket spice blend

  • Salt and pepper to taste

Directions:

  • Preheat oven to 400°

  • In a large mixing bowl combine the Bottle Rocket spice blend and olive oil, then add the chicken and toss to coat well

  • Arrange the chicken on a half sheet pan and season on all sides with a light dusting of salt and pepper

  • Brush any remaining oil and spice mixture over the chicken

  • Bake until cooked through and juices run clear, roughly 30 minutes - an instant read thermometer should read at least 160° at the thickest part of the thigh

  • Allow chicken to rest for 5 minutes before serving
