Ingredients:
2 pounds boneless chicken thighs
2 Tbsp. olive oil
2 Tbsp. Bottle Rocket spice blend
Salt and pepper to taste

Directions:
Preheat oven to 400°
In a large mixing bowl combine the Bottle Rocket spice blend and olive oil, then add the chicken and toss to coat well
Arrange the chicken on a half sheet pan and season on all sides with a light dusting of salt and pepper
Brush any remaining oil and spice mixture over the chicken
Bake until cooked through and juices run clear, roughly 30 minutes - an instant read thermometer should read at least 160° at the thickest part of the thigh
Allow chicken to rest for 5 minutes before serving
