Ingredients:
1 head of cauliflower - cut into florets
½ cup of flour
½ cup of water
1 Tbsp. of Bottle Rocket Spice Blend
½ tsp. salt
½ tsp. black pepper
Cooking spray
¼ cup of hot sauce - used Frank’s Red Hot
1 Tbsp. of melted butter
½ Tbsp. of lemon juice

Directions:
Preheat oven to 450°F. Grease a baking sheet with cooking spray or line it with parchment paper.
Combine flour, water, Bottle Rocket, salt, and black pepper in a bowl until batter is smooth. Add water if consistency of batter is too thick - a Tbsp. at a time. Once ready, add cauliflower and toss to coat.
Spread cauliflower to baking sheets - try to space them out. Bake in oven for 20 minutes - flipping halfway through.
For the sauce, whisk hot sauce, melted butter, and lemon juice. Using a pastry brush, lightly add the sauce to the cauliflower. Place baking sheets back in the oven for another 10 minutes.
Serve hot with your favorite dipping sauce and enjoy.
