Ingredients
1 lb baby potatoes, halved
2 tbsp olive oil
2 tsp Happy Camper seasoning
4 eggs
1 tbsp butter
Optional: chopped chives, parsley, hot sauce, or grated cheese
DIRECTIONS
Heat oven to 425°F.
Toss potatoes with olive oil and Happy Camper seasoning. Spread onto a sheet pan cut-side down.
Roast 25–35 minutes until deeply golden and crisp on the edges.
In a skillet, melt butter over medium heat and cook eggs to your liking.
Pile crispy potatoes onto a platter or into shallow bowls and top with eggs.
Finish with herbs, hot sauce, or cheese if desired.
