Ingredients
2 lbs chicken thighs (bone-in or boneless)
1 lb baby potatoes, halved
3 carrots, cut into chunks
1 red onion, sliced
2 tbsp olive oil
2–3 tsp Happy Camper seasoning
1 tbsp maple syrup
1 tbsp butter, melted
Optional: lemon wedges or parsley to finish
DIRECTIONS
Heat oven to 425°F.
On a sheet pan, toss potatoes, carrots, and onion with olive oil and half the Happy Camper seasoning.
Rub chicken with remaining seasoning and place on top of vegetables.
Roast 30–40 minutes until chicken is deeply golden and vegetables are caramelized.
Whisk maple syrup and melted butter together and drizzle over everything during the last 5 minutes of cooking.
Finish with parsley or lemon if desired.
