Ingredients
0.5 oz Lemon Juice
0.75 oz Herbes de Provence Honey Syrup
2 oz State Line London Dry Gin
0.5 oz White Balsamic Vinegar (Saffi Saana)

Directions:
To make the honey syrup, combine and heat up 750g of honey, 600g of water and 200g of sugar.
To make the Herbes de Provence honey syrup, mix 10g of Herbes de Provence and 200g of honey syrup. Simmer in a pot for 10 minutes.
Add lemon juice, Herbes de Provence honey syrup, gin, and white balsamic vinegar to a cocktail shaker.
Fill the shaker with ice and shake until the shaker is frosted
Double strain into a glass filled with a large Wisco ice cube.
Garnish with a spoonful of Herbes de Provence honey syrup and a sprinkle of dried Herbes de Provence on top.
