Ingredients
2-4 salmon fillets (skin on, 5-6 oz each)
1–2 Tbsp Supper Club Steak Rub
1 tbsp neutral oil (grapeseed or avocado)
3 tbsp unsalted butter
1–2 tbsp fresh lemon juice
1 tsp honey or maple syrup (optional)
Kosher salt (as needed)
Fresh herbs (parsley or dill), for finishing

Directions:
Pat salmon dry. Lightly oil the flesh side and press Supper Club Spice evenly onto the top. (Avoid the skin side.)
Heat a skillet over medium-high. Add oil, then place salmon skin-side down. Press gently for 10–15 seconds to prevent curling. Cook 4–5 minutes, until skin is crisp.
Flip and cook 2–3 minutes more, depending on thickness, until just cooked through.
Reduce heat to medium. Add butter to the pan and cook until golden and nutty. Stir in lemon juice and honey/maple (if using).
Spoon sauce over salmon. Finish with fresh herbs and an extra squeeze of lemon if desired.
