Ingredients

  • 2-4 salmon fillets (skin on, 5-6 oz each)

  • 1–2 Tbsp Supper Club Steak Rub

  • 1 tbsp neutral oil (grapeseed or avocado)

  • 3 tbsp unsalted butter

  • 1–2 tbsp fresh lemon juice

  • 1 tsp honey or maple syrup (optional)

  • Kosher salt (as needed)

  • Fresh herbs (parsley or dill), for finishing

Directions:

  • Pat salmon dry. Lightly oil the flesh side and press Supper Club Spice evenly onto the top. (Avoid the skin side.)

  • Heat a skillet over medium-high. Add oil, then place salmon skin-side down. Press gently for 10–15 seconds to prevent curling. Cook 4–5 minutes, until skin is crisp.

  • Flip and cook 2–3 minutes more, depending on thickness, until just cooked through.

  • Reduce heat to medium. Add butter to the pan and cook until golden and nutty. Stir in lemon juice and honey/maple (if using).

  • Spoon sauce over salmon. Finish with fresh herbs and an extra squeeze of lemon if desired.

  • Yield: 2-4 servings
