Ingredients
1 c Mayonnaise - Dukes, Kewpie or Hellman’s
1 Tbsp. Umamier Spice Blend
4 - ½ inch thick slices rustic sourdough bread
2 Tbsp. best quality extra virgin olive oil
2 large Heirloom tomatoes
Kosher flake salt or Fleur de Sel

Directions:
Whisk Mayonnaise and Umamier Spice Blend together until completely incorporated, allow spices to bloom (at least 30 minutes).
Toast bread in a skillet, toaster or on a hot grill until crisp and golden brown.
Slice tomatoes into eight equal ¼ inch thick slices.
Spread a generous amount of Umamier mayonnaise onto each slice of toasted bread.
Top each warm toast with 2 slices of tomato, drizzle with olive oil and lightly season tomatoes with salt.
