Ingredients

  • 1 c Mayonnaise - Dukes, Kewpie or Hellman’s

  • 1 Tbsp. Umamier Spice Blend

  • 4 - ½ inch thick slices rustic sourdough bread

  • 2 Tbsp. best quality extra virgin olive oil

  • 2 large Heirloom tomatoes

  • Kosher flake salt or Fleur de Sel

Directions:

  • Whisk Mayonnaise and Umamier Spice Blend together until completely incorporated, allow spices to bloom (at least 30 minutes).

  • Toast bread in a skillet, toaster or on a hot grill until crisp and golden brown.

  • Slice tomatoes into eight equal ¼ inch thick slices.

  • Spread a generous amount of Umamier mayonnaise onto each slice of toasted bread.

  • Top each warm toast with 2 slices of tomato, drizzle with olive oil and lightly season tomatoes with salt.
