Ingredients:

  • ½ roasted or rotisserie chicken, hand pulled approximately 3 cups total

  • 1 cup water

  • 1 cup mixed dried fruits; whole golden raisins, apricots and dates - chopped

  • ⅓ cup red onion, diced

  • ¼ cup, celery diced

  • 1 Tbsp. fresh ginger, grated or finely chopped

  • 2 cups mayonnaise 

  • ¼ cup rice wine vinegar

  • 2 Tbsp. brown sugar

  • 2 ½  Tbsp. Berbere Spice Blend

  • ½ tsp. salt

  • Freshly chopped cilantro leaves to garnish

Directions:

  • Simmer the dried fruits in a saucepan with the 1 cup water over medium heat, after about 5 minutes the fruit will plump up and become sticky and tender drain away any excess water

    • In a large mixing bowl assemble the dressing, add the onion, celery, ginger, mayonnaise, rice vinegar, brown sugar, Berbere spice blend, salt and dried fruit, mix together thoroughly

    • Fold the pulled chicken into the dressing and mix thoroughly, refrigerate for 4 hours or better yet overnight in order for the spices to bloom and the flavors to meld

    • Before serving taste the salad, at this point you may want to adjust the flavors by dialing up the salt, vinegar, sugar or Berbere spice blend to suit your palate

    • Garnish with freshly chopped cilantro
