Ingredients:

  • 1 pound Cod, cut into fillets

  • 1 Tbsp. Oaxaca Spice Blend

  • 2 tsp. flour

  • 2 tsp. olive oil

  • 2 tsp. butter

    For the Avocado Sauce:

  • 1 ripe avocado

  • ½ cup cilantro, chopped roughly

  • 1 jalapeno pepper (or to taste), chopped roughly

  • 2 green onions, chopped roughly

  • 1 Tbsp. lime juice, freshly squeezed

  • Salt & pepper to taste

Directions:

To make the Avocado Sauce:

  • Add all ingredients to a food processor and purée until smooth. If the sauce is too thick, add a little water and purée again.

For the Cod Fillet:

  • Combine Oaxaca and flour together in a small bowl.

  • Lay the fish on a pan and cover both sides liberally with the seasoning blend.

  • Melt butter and olive oil over medium-low heat. When hot, add the fish and cook approximately 5 minutes per side. At this heat, the fish will blacken and cook thoroughly and not burn the spices.

  • Top the fish with avocado sauce and serve with lime and fresh greens.
