Ingredients
1 lb carrots, peeled and julienned (about 4 large carrots)
1 tsp kosher salt
1½ Tbsp sugar
2 Tbsp rice wine vinegar
1 Tbsp garlic puree (or finely minced garlic)
3 Tbsp canola oil
1 Tbsp toasted sesame oil
1–1½ Tbsp Gochugaru Chili Flakes

Directions:
Place julienned carrots in a bowl and toss with kosher salt. Let sit 5–10 minutes to lightly soften.
In a small bowl, whisk together sugar, rice vinegar, garlic, canola oil, sesame oil, and Gochugaru Chili Flakes.
Add dressing to carrots and toss well to coat evenly.
Let sit another 5–10 minutes before serving so the flavors absorb.
