Ingredients

  • 1 lb carrots, peeled and julienned (about 4 large carrots)

  • 1 tsp kosher salt

  • 1½ Tbsp sugar

  • 2 Tbsp rice wine vinegar

  • 1 Tbsp garlic puree (or finely minced garlic)

  • 3 Tbsp canola oil

  • 1 Tbsp toasted sesame oil

  • 1–1½ Tbsp Gochugaru Chili Flakes

Directions:

  • Place julienned carrots in a bowl and toss with kosher salt. Let sit 5–10 minutes to lightly soften.

  • In a small bowl, whisk together sugar, rice vinegar, garlic, canola oil, sesame oil, and Gochugaru Chili Flakes.

  • Add dressing to carrots and toss well to coat evenly.

  • Let sit another 5–10 minutes before serving so the flavors absorb.
