Ingredients:

  • 4 English muffins

  • 2 cups of whole milk

  • 1 lb. of ground lamb

  • 1 lb. of sweet Italian sausage

  • 12 oz. of Pecorino Romano cheese - grated

  • 2 large eggs

  • 2 Tbsp. of Bomba Spice Blend

  • ½ tsp. of salt

Directions:

  • Preheat oven to 375 degrees

  • Cut English muffins into 1” chunks; place in a medium sized mixing bowl and cover with milk and let stand 10-15 minutes

  • In a large mixing bowl add the lamb, sausage, pecorino cheese, eggs and seasonings

  • Using your hands squeeze a bit of milk out of the muffins and add to the meatball mixture

  • Gently mix all of the ingredients until just combined

  • Using a delicate touch form the meatballs without too much pressure or rolling

  • Place finished meatballs on a lightly oiled sheet pan

  • Bake in the oven for 10-12 minutes or until lightly brown, set aside
