Ingredients:
4 English muffins
2 cups of whole milk
1 lb. of ground lamb
1 lb. of sweet Italian sausage
12 oz. of Pecorino Romano cheese - grated
2 large eggs
2 Tbsp. of Bomba Spice Blend
½ tsp. of salt

Directions:
Preheat oven to 375 degrees
Cut English muffins into 1” chunks; place in a medium sized mixing bowl and cover with milk and let stand 10-15 minutes
In a large mixing bowl add the lamb, sausage, pecorino cheese, eggs and seasonings
Using your hands squeeze a bit of milk out of the muffins and add to the meatball mixture
Gently mix all of the ingredients until just combined
Using a delicate touch form the meatballs without too much pressure or rolling
Place finished meatballs on a lightly oiled sheet pan
Bake in the oven for 10-12 minutes or until lightly brown, set aside
