Ingredients:
1 pound oyster mushrooms, stems trimmed, cut into large clusters
Half of a white onion, sliced
3 Tbsp. extra virgin olive oil
2 Tbsp. apple cider vinegar
To serve:
Warm corn tortillas
Finely chopped onion and cilantro
1 ripe avocado, smashed and seasoned with Pacific Smoke Sea Salt
Morita salsa (see recipe)
Lime wedges

Directions:
Heat a large heavy bottomed skillet over high heat.
Add the olive oil to the pan. When rippling, add the mushrooms and onion and stir to coat.
Allow the mushrooms to sear undisturbed for one minute; when well browned, stir to continue cooking through.
Season with Pacific Smoke and Morita to taste.
Add the apple cider vinegar and swirl until evaporated.
Remove from heat and serve.
