Ingredients

  • 2 cups mayonnaise - Duke’s, Kewpie or Hellman’s

  • ½ cup extra virgin olive oil

  • 3 large cloves fresh garlic - approximately 2 ½ Tbsp.

  • 2 Tbsp. Pimentón Spice Blend

  • 2 tsp. sherry vinegar

Directions:

  • Place olive oil, garlic, Pimentón and sherry vinegar in the pitcher of a blender and purée on high speed until smooth.

  • Strain the mixture to remove any remaining large chunks of garlic the blender may have missed.

  • Drizzle the oil mixture into the mayonnaise while whisking vigorously to incorporate. Taste the aioli and adjust the acidity to your liking by adding a splash of vinegar if needed.
