Ingredients
2 cups mayonnaise - Duke’s, Kewpie or Hellman’s
½ cup extra virgin olive oil
3 large cloves fresh garlic - approximately 2 ½ Tbsp.
2 Tbsp. Pimentón Spice Blend
2 tsp. sherry vinegar

Directions:
Place olive oil, garlic, Pimentón and sherry vinegar in the pitcher of a blender and purée on high speed until smooth.
Strain the mixture to remove any remaining large chunks of garlic the blender may have missed.
Drizzle the oil mixture into the mayonnaise while whisking vigorously to incorporate. Taste the aioli and adjust the acidity to your liking by adding a splash of vinegar if needed.
