Directions:

  • Preheat oven to 400°F.

  • In a small bowl, make a paste with the Vadouvan, salt and olive oil.

  • Remove any leaves on the cauliflower; wash and pat dry.

  • Generously coat the cauliflower with the paste, place on a sheet pan and cover with foil.

  • Roast the cauliflower, removing the foil after 10 minutes.

  • Continue to roast for another 20-25 minutes, or until the outside is crisp and cauliflower is fork tender.

  • Slice into wedges and serve with Greek yogurt & lime wedges.
