Ingredients:
1 medium size cauliflower
2 Tbsp. Vadouvan Spice Blend
2 Tbsp. olive oil
2 tsp. salt

Directions:
Preheat oven to 400°F.
In a small bowl, make a paste with the Vadouvan, salt and olive oil.
Remove any leaves on the cauliflower; wash and pat dry.
Generously coat the cauliflower with the paste, place on a sheet pan and cover with foil.
Roast the cauliflower, removing the foil after 10 minutes.
Continue to roast for another 20-25 minutes, or until the outside is crisp and cauliflower is fork tender.
Slice into wedges and serve with Greek yogurt & lime wedges.
