DIRECTIONS:
Slice the Arctic Char lengthwise, separating the belly from the top loin, and carefully remove the skin from each fillet.
Wrap the top loin and refrigerate; reserve for cooked preparation or later use.
Generously coat the belly portion with Hart-Beet on all sides.
Wrap and refrigerate for at least 24 and up to 48 hours.
Slice thinly on the bias and serve with soy sauce and pickled ginger.
