Ingredients:
1 cup mayonnaise, preferably Kewpie brand
1 Tbsp. soy sauce
4 thick slices sourdough bread
2 large ripe avocados
2 Tbsp. toasted sesame oil
4 eggs
1 Tbsp. Togarashier spice blend
Salt and pepper to taste
1⁄2 cup roughly chopped cilantro

Directions:
Mix mayonnaise and soy sauce together and set aside.
Toast slices of bread and keep warm in a low oven.
Cut the avocados in half, remove the pits and scoop the flesh from the skin.
Spread a thin layer of soy mayonnaise onto each slice of toast.
Slice the avocados and arrange over the mayonnaise, season the avocado with salt, pepper and a liberal sprinkling of Togarashier spice blend.
Warm a large nonstick skillet over medium heat, add the toasted sesame oil and fry the eggs, cook until whites are set, and edges start to crisp, season with salt and pepper.
Top each slice of toast with one fried egg
Season the egg with a liberal pinch of Togarashier spice blend and top with chopped cilantro.
