Ingredients:

  • 1 cup mayonnaise, preferably Kewpie brand

  • 1 Tbsp. soy sauce

  • 4 thick slices sourdough bread

  • 2 large ripe avocados

  • 2 Tbsp. toasted sesame oil

  • 4 eggs

  • 1 Tbsp. Togarashier spice blend

  • Salt and pepper to taste

  • 1⁄2 cup roughly chopped cilantro

Directions:

  • Mix mayonnaise and soy sauce together and set aside.

  • Toast slices of bread and keep warm in a low oven.

  • Cut the avocados in half, remove the pits and scoop the flesh from the skin.

  • Spread a thin layer of soy mayonnaise onto each slice of toast.

  • Slice the avocados and arrange over the mayonnaise, season the avocado with salt, pepper and a liberal sprinkling of Togarashier spice blend.

  • Warm a large nonstick skillet over medium heat, add the toasted sesame oil and fry the eggs, cook until whites are set, and edges start to crisp, season with salt and pepper.

  • Top each slice of toast with one fried egg

  • Season the egg with a liberal pinch of Togarashier spice blend and top with chopped cilantro.
