Ingredients:
1½ lbs broccoli (about 2 large heads), cut into florets
3 Tbsp extra virgin olive oil
1 tsp kosher salt
½ tsp black pepper
2 cups hummus (homemade or store-bought such as Bunky’s)
Juice of ½ lemon
¼ cup fresh herbs (parsley, dill, and/or mint), chopped
1–2 tsp Za’atar
Lemon zest for finishing (optional)

Directions:
Preheat oven to 425°F.
Toss broccoli with olive oil, salt, and pepper on a sheet pan. Roast 18–22 minutes, until tender and lightly caramelized at the edges.
Spread hummus onto a serving platter, creating swoops with the back of a spoon.
Pile the warm roasted broccoli over the hummus and squeeze lemon juice over the top.
Finish with Za’atar and fresh herbs. Add lemon zest if desired.
