Ingredients:

  • 1½ lbs broccoli (about 2 large heads), cut into florets

  • 3 Tbsp extra virgin olive oil

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 2 cups hummus (homemade or store-bought such as Bunky’s)

  • Juice of ½ lemon

  • ¼ cup fresh herbs (parsley, dill, and/or mint), chopped

  • 1–2 tsp Za’atar

  • Lemon zest for finishing (optional)

Directions:

  • Preheat oven to 425°F.

  • Toss broccoli with olive oil, salt, and pepper on a sheet pan. Roast 18–22 minutes, until tender and lightly caramelized at the edges.

  • Spread hummus onto a serving platter, creating swoops with the back of a spoon.

  • Pile the warm roasted broccoli over the hummus and squeeze lemon juice over the top.

  • Finish with Za’atar and fresh herbs. Add lemon zest if desired.
